Aceto Balsamico di Modena IGP “Classico” 250ml is a sweet-and-sour condiment made of cooked grape juice (Must) and wine vinegar. Minimum 6% acidity. The more it is aged, the more it gets thick and sweet. Balsamic vinegar of Modena IGP must have at least 20% of grape must. Therefore the cheaper quality starts with 20% grape must and 80% wine vinegar. The higher the content of grape must, the higher the quality. It is possible to add caramel as a coloring agent (up to 2%), but all REALE products do not add caramel or anything else. Balsamic Vinegar of Modena IGP must be bottled in Province of Modena and the minimum aging in wood barrels is 60 days. This product is aged 2 years in wood before it is ready which gives it a superior quality and taste compared to cheaper products.
