Ginger slices

Ingredients for 6:

  • 100 gr (3 1/2 oz) chicken livers
  • 100 gr ( 3 1/2 oz) of high quality tuna in olive oil
  • A clove of garlic
  • A small carrot
  • 2 sage leaves
  • A sprig of rosemary
  • A bunch of parsley
  • A spoonful of capers in vinegar
  • A piece of chilli pepper
  • A spoonful of gherkins
  • ½ glass Ginger oil
  • two spoonfuls of white wine vinegar
  • An untreated orange
  • Salt
  • 12 slices of white bread, toasted
  • A piece of fresh ginger


Prepare a mixture of all the herbs with the garlic and brown them in the Ginger oil together with the chicken livers, salt to taste then add the vinegar, letting it evaporate, cook for 5 minutes on a low heat.

Put this mixture in a blender with the juice of half an orange, a spoonful of grated orange rind, the tuna, gherkins and blend until a smooth sauce is obtained. Spread this sauce on the toasted bread and garnish with a thin slice of ginger.
