Jamie tells us that in 2012, when London had the Olympics, Britain was (finally) ready and able to showcase its food. This after some 70 years of dreadful food – through the wars, through rationing. For the first 10 years of his career, he explored the world, learning as much as he could while not only studying the food of France and Italy but also going further afield; even writing a book about American cooking. Thus, for him, this book marks coming full circle. He found that many of the dishes considered quintessentially British actually arrived with immigrants long ago – such as fish and chips. He describes these recipes as being “beautiful comfort food at its best – unfussy and unpretentious, but full of life.” This is a 2011/2012 hardback first US edition.
