In the introduction to this 1994 volume, the author tells us that even before his formal apprenticeship, which began when he was 13, he was in the kitchen of his family’s restaurant. He says that then and through his professional life his primary concern as a chef was taste. In the period before writing this book, he became increasingly interested in defining healthy eating habits. He scaled down use of certain foods. He has not eliminated anything, he has smaller portions of those foods and larger amounts of more healthy ingredients. Pepin emphasizes that this “is not a ‘diet’ book, with all the negative feelings that epithet invokes. This is simple and healthy cooking that anyone can enjoy.” This is a 1994 paperback edition in good condition. (previously owned)
