The author was born in Arizona to Chinese parents. He grew up in Chicago and learned the basics of Chinese cooking at eleven, when he worked in his uncle’s restaurant. He went to UC Berkeley and taught (really!) Italian cooking to help pay his school fees. This led to his teaching Chinese cooking classes and an instructorship at the California Culinary Academy. In 1982 he was hired by the BBC to do a TV series on Chinese cooking. And the rest, as one says, is history. TV shows in the UK and USA. Twenty plus cookbooks. His own YouTube channel. Fragrant Harbor was an earlier name of Hong Kong. The author taught cooking there for some ten years, and this book reflects what he taught as well as what he learned. In addition to the recipes, he covers ingredients, equipment and techniques. This is a 1989 hardback with dust jacket. Other than a few notes by a prior owner, both are in very good condition.
