In his 2010 volume Rocco sets it out on the first page: “my goal for this book was to take the foods we love – no matter how bad they are for us – and make them healthy and flavorful, something I really want to eat.”  He offers 150 recipes all of which are under 350 calories. For example, his take on Eggplant “Manicotti” drops the calorie count from over 900 to under 300…….I’m tempted to keep this one after all!
