This is a 2001 book by the chef-owner (at that time) of Salamander Restaurant in Boston. The author grew up in Savannah Georgia and learned cooking from both his grandmothers. He cooked his way through the University of Georgia and the Culinary Institute of America. I love that the first 70 pages are devoted to getting the reader ready to cook. The essential pantry, essential equipment, spices and rubs, stocks, loads of info on oils, dipping sauces etc. Then you are armed for success with the 130+ recipes that follow. The chef gives tips and comments along the way. This is a 2001 hardback that appears to be a first edition. It is in very good condition with dust jacket.

Most of our Extra Virgin Olive Oil is from Lake Garda in Italy. Olive aren't typically grown so far north. However, the soft breezes coming from the south, across Lake Garda, get trapped by the leading edges of the Dolomite mountains and create a micro-climate. One that is ideal for growing olives!
