Marina remembered her father infusing the EVOO with lemons. So, when she inherited the estate, she started infusing her EVOO with different ingredients, including Mandarin oranges. The infusing process is the same: Mandarin oranges are added to the crushing of the olives so that you get a true infusion. The warm sweet aroma of the mandarin oranges is released each time you open the bottle.
The product is excellent on exotic salads and to marinate raw and smoked fish as well as shellfish such as shrimp. It is also delightful in making sweet pastry, biscuits and cakes.

Marina Colonna inherited her father's Molise-based 55 hectare olive farm in 1996. Growing up, her father always pressed the olives with the rinds of their organic lemons to produce a true infused Lemon Extra Virgin Olive Oil, and Marina continued that practice with many ingredients.
