The name Aceto Balsamic di Modena IGP is a designation by the Balsamic Vinegar consortium in Modena, Italy. This is name you will see in most grocery stores. But grocery varieties are loosely regulated! They grape must can be as young as 60 days and the end product is diluted and contains many additives. Aceto Balsamico di Modena IGP “Classico” 250ml is a sweet-and-sour condiment made of Cooked grape juice (Must) and wine vinegar. Minimum 6% acidity. The more it is aged, the more it gets thick and sweet. Balsamic vinegar of Modena IGP must have at least 20% of Grape must. Therefore the cheaper quality starts with 20% grape must and 80% wine vinegar. The more the content of grape must is, the more the quality is high. It is possible to add caramel as a coloring agent (up to 2%), but all REALE products do not add caramel or anything else. Balsamic Vinegar of Modena IGP must be bottled in Province of Modena and the minimum ageing in wood barrels must be 60 days. This product is aged 2 years in wood before it is ready which gives it a superior quality and taste compared to cheaper products.
This is the classical Balsamic Vinegar for everyday uses. It has to reach 6% acidity and therefore it is made of cooked grape must (at least 20%) and wine vinegar in variable proportion. The thickness of this product depends on the content of cooked grape must and of course of the ageing time of this must. Only two qualities are put on the market: ?Affinato? aged for at least 12 years and ?Extravecchio? aged for minimum 25 years. The REALE “Affinato” is aged for 15 years and is exceptional!

They use Lambrusco and Trebbiano grapes that are grown on their estate in Italy. The grapes are cooked at a low temperature for 36 hours which produces a grape must. The must is then placed in large wooden barrels (oak, chestnut, cherry, ash, juniper, and mulberry) with a starter, similar to sourdough bread. At the end of the first year, the musts are moved to smaller barrels made from a different wood. At the end of the 5-year cycle, the must has gone through 5 barrels of different woods to achieve its full character and distinctive flavor. The flavor of Balsamic evolves over time and the longer it is aged, the richer and sweeter it becomes. This 100% Balsamic Vinegar will complement a wide range of provisions. We enjoy with salads and greens of all variety, sprayed on grilled red and white meat and as a quick spritz over fresh mozzarella and antipasto.
