Aceto Balsamico di Modena or Balsamic Vinegar of Modena IGP are both designations by the Consortium of Balsamic Vinegar makers in Modena. The quality of this product varies widely due to the range of products that can use this name. This Balsamic Vinegar is made from cooked grape must (30%) and a special wine vinegar (70%) – nothing else!

Most of what is sold in the grocery store also has the label “Aceto Balsamico di Modena”. And most of those products are made with an inexpensive wine vinegar (80%) and 60 day-old grape must (instead of a minimum of 1 year). Further, many producers add caramel coloring and brown sugar to the product.

When you taste a REALE product, you will immediately know that you are tasting a quality Balsamic Vinegar. This product is ideal for using when a recipe calls for Balsamic Vinegar that is going to be cooked. At 6% acidity, this product is tart with notes of sweetness and is ideal for sauces, on grilled meats and vegetables plus it works well in dips.

Aceto Balsamico di Modena IGP “Classico” 250ml is a sweet-and-sour condiment made of Cooked grape juice (Must) and wine vinegar. Minimum 6% acidity. The more it is aged, the more it gets thick and sweet. Balsamic vinegar of Modena IGP must have at least 20% of Grape must. Therefore the cheaper quality starts with 20% grape must and 80% wine vinegar. The more the content of grape must is, the more the quality is high. It is possible to add caramel as a coloring agent (up to 2%), but all REALE products do not add caramel or anything else. Balsamic Vinegar of Modena IGP must be bottled in Province of Modena and the minimum ageing in wood barrels must be 60 days. This product is aged 2 years in wood before it is ready which gives it a superior quality and taste compared to cheaper products.

Every year it is transferred into a different wooden barrel to acquire the various aromas of oak, cherry, chestnut, ash, mulberry, juniper woods. The Traditional Balsamic Vinegar of Modena DOP can only be found in the special shaped 100ml glass jar designed by Giugiaro which is numbered and sealed with the apposite DOP mark. Only two qualities are put on the market: ?Affinato? aged for at least 12 years and ?Extravecchio? aged for minimum 25 years. The REALE “Affinato” is aged for 15 years and is exceptional!
